Banana Ice Cream with Raspberry Sauce

Banana Ice Cream

Are you in the mood for a cool, sweet and thick ice cream? Try this raw vegan version that taste exactly like ice cream but has only one ingredient – frozen bananas. Serve it as it is or with this delicious raspberry sauce.

Recipe
5-6 frozen bananas
1 cup of water
1 tsp grounded vanilla powder (optional)

Raspberry Sauce
1,5 cup of frozen raspberries
½ of a small banana (for the consistency)
4-5 pitted medjool dates
1 tsp grounded vanilla powder
1 cup of water

The banana ice cream melts pretty fast so start by making the raspberry sauce. Put all the ingredients for the sauce in a high speed blender. I used a Vitamix which makes the sauce very smooth (and pulverize the dates).

To make the banana ice cream use a food processor or high speed blender. When freezing the bananas I peel them first, chop them into smaller pieces and put them in the freezer for a couple of hours. Put the frozen bananas into the food processor/blender and start by adding 1/2 cup of water. You can add more as needed. How much water you’ll need depends on the size of the bananas and what consistency you want the ice cream to be. It may take a few minutes but be patient because it’s definitely worth it!
