This gazpacho has a little twist with mango and sun dried tomatoes… I love it! What makes it extra good are the fresh herbs and finely chopped vegetables on top. It’s a really savoury and refreshing summer soup.
5 sun dried tomatoes
3 stalks of celery
1 red bell pepper
½ a small onion
black pepper for seasoning
¼ of a cucumber
fresh herbs for decoration (basil, thyme or cilantro)
Soak the sun dreid tomatoes for a few hours, use dried tomatoes (not tomatoes that’s been in oil). Chop all the ingredients and save some of it for the decoration. You can cut the decoration that’s going to be on top a bit more carefully. Mix all of the ingredients in a mixer, except the cucumber, it’s only for decoration. Pour it into some nice looking glasses and add the decoration and fresh herbs on top. Enjoy!
