Zucchini Noodles with Italian Tomato Marinara

These noodles are a perfect substitute for pasta, they are crunchy, filling and reminds me of real pasta together with this savoury Italian tomato sauce.

2 zucchinis
¼ lbs leafy greens (250 g)

Tomato Marinara
1 lbs cherry tomatoes (500 g)
6 sun dried tomatoes
3 fresh dates
2 tsp frozen basil
2 tsp frozen chieves
1 tsp dried oregano
1 clove of garlic (optional)
black pepper for seasoning

fresh basil leaves for decoration

Start with soaking the sundried tomatoes for a few hours until they are soft. Mix the cherry tomatoes with sun dried tomatoes, pitted dates, garlic and spices to a thick tomato sauce.

Use a spiralizer for the zucchini noodles. If you don’t own a spiralizer just google it and you’ll find all different varieties, I use a spiralizer like this. Spread the leafy greens in a nice looking bowl, add the noodles and put the tomato marinara on top. Decorate with some fresh basil and enjoy!
