I’ve never had a green Piña Colada before, but this turned out to be really refreshing and delicious. Pour the smoothie into a nice looking glass and decorate it with shredded coconut and a slice of pineapple for that extra luxurious feeling.
Recipe for 2 glasses
2 cups of chopped kale
2 frozen bananas
1 cup of frozen mango
½ small pineapple
2 tbsp coconut milk
1,5 cups of water
shredded coconut for decoration
De-stem the kale and chop into smaller pieces. I highly recommend using a high speed blender when making green smoothies with kale: it will pulverize the kale and make it very smooth. If you don’t have such a blender then switch the kale for some other kind of softer leafy green, such as spinach.
Mix the kale/spinach with the bananas, mango, pineapple, coconut milk and water. I used a really thick coconut milk, almost like a coconut cream in the consistency. If you’re using a more watery-coconut milk then use more milk and add less water.
Pour into a nice glass, decorate with shredded coconut and enjoy!
